Marvelous Monday Update 3/14/2010
SCHOOL
Checked my transcript today and my grade for Corporate Finance was posted. Got an A. :) Yay! I ended up getting a B on my term paper, and I've emailed the instructor 3 times asking for feedback on what he took points off on. Not surprising, I haven't received an answer back!
COOKING
One of the ladies on one of my stitching groups posted a link for a St. Patrick's Day meal from the Cuisine At Home website. Since I had beef brisket in the freezer, I thought I'd try it out. It's a pretty easy crock pot recipe called Marmalade Glazed Corned Beef with Carrots and Potatoes, recipe HERE.
A couple of notes:
• The site is correct: The beef was salty, even after rising it. It made the carrots *really* salty. The potatoes weren't, so I'd suggest putting the potatoes in and then layer the carrots on top.
• I substituted wine for the lager, and red wine vinegar for the white.
• I didn't carmelize the marinade in the oven, just heated it up on the stove and poured it over the beef. The marinade was really good over the beef.
• I did cut the extra fat off the beef. Don't do like I did, and slice your pinky finger. I bled like a stuck pig! Luckily, no blood on the beef.
STITCHY STUFF
I haven't done any stitching since around March 7th, so no JG update. My plan is to get it out tonight and do some stitching on it (right after I clean Charley's cage -- the silly girl laid 4 eggs last week!). Here's the progress I did on Blossom Splendor:

I bought the Blue Geisha kit last year when I went on the ILCS retreat to St. Charles.
Summer Geisha was actually featured in one of the UK magazines last fall. Guess what? It was called Blossom Splendor. It's one of my current WIPs.

Thanks for letting us know about the corned beef. I love it. And we have a guest staying with us. I often go to a sandwich shop here in Atlanta called The Fire House and get the New York Steamer. It's pastrami and corned beef. It also has italian dressing and cheese. YUM! I add lettuce for a little crunch. I'll have to try this recipe. Perhaps roasting carrots in the oven. And putting the beef and potatoes together in the crock pot.

ReplyDeleteWell whatever the name of the pattern, it has beautiful colors! Glad you didn't stitch after cutting your pinky! LOL I don't like corned beef, but we are having a party on the 17th, but I'm not cooking that part, someone else is! Just think your next update will be in SPRING!!!!!

Congratulations on your A in Corporate Finance. Rebecca is currently taking that class. I don't know what her grade is now I just know she works her butt off trying to get an A. Was it hard for you? Rebecca even goes to all the breakout sessions led by the graduate student assigned to the class. She is learning disabled but refuses special treatment from the college to help her instead she finds study groups and sticks with it. She is in her last year and has a GPA of 3.5 out of 4. In high school she won a scholarship that covers 75% of her tuition costs based on her grades and again she refused special care because of her challenges. Right now we ware able to pay the other 25% and a parking pass. She pays for her books. She buys them used and also rents them. Sorry to ramble on. Thanks for listening.

I do hope that your family in Japan is okay. Even without a personal connection, it was awful to watch the video from what happened last week, so I can imagine it was that much worse for you.
